Quince pickle recipe
A great alternative to Quince Jelly. Pairs well with cheese and cold meats.
Quince Pickle
Ingredients
Quince 6 - medium
Sugar - 400g
Apple cider vinegar - 800 mls
Dried juniper berries- 14
Black pepper corns - 14
Bay leaf - 2
Method
Heat all ingredients except the Quince. Once the sugar has dissolved peel Quince and cut into quarters. Cook for 20mins, test with knife slight soft. Heat jars to sterilse, add hot Quince mixture cover with hot lids.
